Action Points[]
First and foremost, huts provide you with extra action points. When your turn starts the game starts you at 5 action points and for each hut you own it adds 25 divided by the previous number. Wesnoth drops everything after the decimal point, producing the following sequence:
5->10->12->13->14->[...]->26
Upgrading to a farmhouse will make your hut count as two during the calculations.
Community[]
The next important function of huts is the community they provide. You can build within 15 hexes of a hut you own. This is much safer and more efficient than moving your leader around everywhere you need to build.
Protection[]
Lastly, huts will protect the hexes directly adjacent to them. Enemies will not be able to build (or destroy your things) in these hexes until they capture the hut.
Upgrading to a watchtower doubles this range.
